2016 is an exciting year for Authenticity as we enter our eighth year of producing organic wine.
Thanks to the help of dedicated locals and volunteers we have just finished harvesting our grapes and will be completing the whole process from harvest to final bottle for the very first time on the premises.
Depending on the year, small-scale production of wine is enough to delight our guests for around a year. Since 2005, Gregory Damaskos, Director and Founder of Authenticity has led a small team in the maintenance of the vineyards on the property in Port Elliot.
The final product is a Shiraz blend and occasionally a Chardonnay depending on the year and the quality of the grapes.
Gregory adopted the vineyards as part of the property almost 18 years ago and extended his naturopath and food knowledge into wine making.
“It’s a simple, honest table wine that is 100% chemical free. I have always been fascinated by the amount of chemicals that go into wine making these days”, says Gregory.
Coming from a Mediterranean background, Gregory wanted to make a wine that was traditional and as it would have been made by his ancestors in Greece. Taking the holistic and natural approach, the grapes are picked, pressed and fermented. By not using chemicals, there is a higher risk of the batch spoiling, but more often than not, our wine develops beautifully! With natural antioxidants, a high level of phytonutrients and a qualities that aid digestion, our wine is a health drink if you don’t drink it in excess, says Gregory.
Our wines are currently in the cold-pressing stage and will be left to naturally age in our wine barrels and won’t be hitting the dinner table until around November 2016.
